Pan Fried Sausage with Spring Broccoli and White Beans
If you need to make dinner but haven't gone to the store, Chef Makini Howell of Plum Bistro has a solution. It's a plant-based recipe that incorporates ingredients you may already have at home.

- 1 lb Beyond Meat ground
- 1 small bunch Broccolini (or broccoli)
- 1 small can White beans
- Italian Seasoning (recipe follows)
- Sausage Seasoning (recipe follows)
- ½ cup veggie stock
- Your favorite artisan bread
- Juice of ½ lemon
- Parmesan
- olive oil
Italian Seasoning (You can make this and store in spice container for later use)
- 2 tbsp dried basil
- 2 tbsp dried oregano
- 2 tbsp dried rosemary
- 2 tbsp dried marjoram
- 2 tbsp dried thyme
- 2 tbsp dried savory
- 2 tbsp dried cilantro
- 2 tbsp dried red pepper flakes
Sausage Seasoning
- 1 tsp dried parsley
- 1 tsp Italian seasoning
- 1 tsp black pepper
- ¼ tsp fennel seed
- ¼ tsp paprika
- ½ tsp red pepper flakes
- 1 tsp salt
- ½ tbsp fresh garlic minced
- ½ tsp fresh onions minced
Season your sausage and make into hand formed sausage links. Set aside.
Heat a pan on medium high, add some olive oil and cook sausages 2-4 minutes until firm and well done.
Remove sausage from pan and add in broccolini cook for about 2 min.
Drain white beans and add in to the skillet, cook for a bit.
Season with a little Italian seasoning if you like, add in stock and add sausage back. Allow the skillet to simmer down until liquid is evaporated.
Squeeze lemon and add parmesan on top. Serve with artisan bread if using.
